Our Iberico Pork Chops come from the "chuletero" or loin area of the esteemed Iberico breed. These "pata negra" hogs are acorn-fattened on the fertile meadowlands of Spain, resulting in lovely marbling, nutty-sweet flavor and great tenderness. Because of their delicacy, these chops should be cooked to no more than medium-rare, and the fat should not be trimmed. Grill or fry them up for a decadent barbecue event or Southern-style breakfast. Alternatively, drizzle a fruit, balsamic or wine-based sauce on top and pair with Mediterranean vegetables for a real taste of the good life! This Iberico chuletero pork chop is made by Fermin, a family-owned company established just outside Salamanca, Spain in the early 20th century. As mandated by Spanish law, all their pigs are raised without antiobiotics or hormones. They offer a wide range of pork products, including fresh and cured cuts, hams, loins, chorizos and more, and have become one of the world's premier sources of coveted Iberico pork.
